12 Healthy Autumn Dinners

You might just be sick of me saying that I LOVE AUTUMN, but can you blame me? I love everything about the season! Especially all the cozy fall foods! The past week I went to Trader Joe's and bought a spaghetti, acorn and butternut squash because I wanted to make all the fall things. Between butternut squash soup, a spaghetti squash bolognese, and a stuffed acorn squash, there are so many different things that you can do with each!

Oh, and don't forget about the cranberries (we do live in Massachusetts!), sweet potatoes and apples. Like. said, there are so many different kinds of fall recipes that you can make. So, I wanted to share some of my favorites! All of these recipes will have you wanting to curl up around a fire.

I haven't made that butternut squash pizza yet, but I bought all the ingredients to make it and try it out! I do make an awesome sweet potato crust, so I'm thinking of doing that with the butternut squash and goat cheese blend on top. I will definitely report back once I try it out and let you guys know how it turned out!

I feel like I'm more creative with foods during the colder months. We tend to grill a lot in the summer, because its just too hot to cook inside. But, maybe also because you are stuck inside all day, I love to bake and cook and try new things in the kitchen.

My personal favorite autumn dish? Hm, its probably a draw between my dad's homemade chili and his pizza! Neither of which are healthy, but hey, not everything can be. My dad has been making his chili since I can remember. It reminds me of Sunday's, where we would come back from church, he would start making it up, and while we did some Sunday chores, he would have it cooking. By the time Sunday night football was on, we would be chowing down on his chili.
